Ingredients:
For the chicken:
- 1 1/2 pounds boneless, skinless chicken thighs or legs
- 1/4 cup Peri Peri sauce (store-bought or homemade)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
For the rice:
- 1 cup uncooked white or brown rice
- 2 cups water
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 teaspoon paprika
- Salt to taste
Instructions:
1. Preheat oven to 400°F (200°C).
2. In a large bowl, whisk together Peri Peri sauce, olive oil, garlic, paprika, salt, and pepper. Add the chicken and marinate for at least 30 minutes.
3. Remove the chicken from the marinade and bake for 25-30 minutes or until cooked through.
4. Heat oil in a large saucepan over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
5. Add the garlic, paprika, and rice to the saucepan. Cook for 1-2 minutes, stirring constantly.
6. Add the water to the saucepan and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and fluffy.
7. Serve the Peri Peri chicken with the flavorful rice and enjoy!
Homemade Peri Peri Sauce Recipe (optional):
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh cilantro
Mix all ingredients together and adjust to taste.
