- 1 cup basmati rice
- 1 pound lamb or beef, cut into small pieces
- 2 medium onions, chopped
- 2 cloves garlic, minced
- 1 cup raisins
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
- 2 cups water
Instructions:
1. Rinse the rice and soak it in water for 30 minutes. Drain and set aside.
2. Heat oil in a large pan over medium heat. Add onions and cook until softened.
3. Add garlic, cumin, coriander, turmeric, salt, and pepper. Cook for 1 minute.
4. Add the meat and cook until browned.
5. Add raisins and cook for 2 minutes.
6. Add the rice and mix well.
7. Add water and bring to a boil.
8. Reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is cooked and fluffy.
9. Serve hot, garnished with chopped fresh herbs (optional).
Note: Traditionally, Kabuli Pulao is cooked with lamb fat or tail fat, which adds a unique flavor. If you can't find lamb fat, use vegetable oil instead.
