- 2 tablespoons garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (optional)
- Salt, to taste
- 2 tablespoons vegetable oil
- 2 large onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon white cumin seeds
- 1 tablespoon coriander seeds
- 2-3 green chilies, chopped
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup heavy cream
- Fresh cilantro, for garnish
instructions:
1. Marinate mutton in yogurt, ginger paste, garlic paste, cumin, coriander, turmeric, chili powder (if using), and salt for 30 minutes.
2. Heat oil in a karahi or wok over medium heat. Add onions and cook until softened.
3. Add the marinated mutton and cook until browned.
4. Add garlic, white cumin seeds, coriander seeds, and green chilies. Cook for 1-2 minutes.
5. Add butter and flour, stirring constantly for 1-2 minutes.
6. Gradually add heavy cream, stirring continuously until the sauce thickens.
7. Reduce heat to low and simmer for 10-15 minutes or until the mutton is tender.
8. Garnish with cilantro and serve with naan or rice.
Note: Traditionally, Mutton White Karahi is cooked in a karahi (wok) over high heat, which gives the dish its signature flavor and texture. If you don't have a karahi, a large skillet or sauté pan will work.
