Ingredients:
- 1 lb boneless, skinless chicken breast or thighs, cut into thin strips
- 2 tablespoons vegetable oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup mixed vegetables (e.g., bean sprouts, cabbage, carrots)
- 2 cups cooked noodles (preferably egg noodles)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- Salt and pepper to taste
Instructions:
1. Cook the noodles according to package instructions. Drain and set aside.
2. In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
3. In the same skillet, add the remaining 1 tablespoon of oil. Add the onion and garlic and cook until the onion is translucent, about 3-4 minutes.
4. Add the mixed vegetables and cooked chicken back into the skillet. Stir to combine.
5. Add the cooked noodles, soy sauce, and oyster sauce (if using) to the skillet. Stir-fry everything together for about 2-3 minutes.
6. Season with salt and pepper to taste.
7. Serve hot and enjoy!
Tips:
- Use fresh and high-quality ingredients for the best flavor and texture.
- Cook the noodles al dente, so they still have a bit of bite.
- Customize the vegetables to your liking and what's in season.
- Use a wok or large skillet with a non-stick surface for easy stir-frying.
- Don't overcook the chicken or vegetables - aim for a quick and gentle stir-fry.

- Spicy Chow Mein: Add red pepper flakes or sriracha to the stir-fry for a spicy kick.
